Chesnok Red is the garlic we get asked for most, and the one we planted our farmstead around.
It’s a purple-stripe hardneck from the old Georgian strain Shvelisi: 8 to 12 easy-peel cloves, a deep purple blush on the wrappers, and a flavor that’s nutty and a little sweet. Roast it and it goes almost candy-like. Raw, it’s round, not harsh. Chefs like it because it doesn’t disappear in a sauce.
We grow it organically in the Wisconsin Northwoods, planted and pulled by hand. Sold by the pound.
Planting garlic — bulbs 2 inches or larger. One pound plants about 50 cloves. Order now for fall. We harvest in July and cure on the farm. We fulfill orders as they are received.
Cooking garlic — smaller bulbs, same variety, same farm. Best for roasting, sautés, and any pot that wants a sweeter garlic.
